JASON WHITE

We first came across Jason White while he was Director of Fermentation at Noma. But our respect really deepened with this multidisciplinary scientist once we got to know Jason’s complete dedication to his craft. His passion for the intersectionality of science and food have made him one of the most innovative pioneers in the world of microorganisms and their potential benefits for society. 

Even though we come from two completely different worlds, we found a kindred spirit in Jason. Inspired by nature, honoring the past while trailblazing the future, finding beauty in the gray, were all forces that brought us to this collaborative Sack Coat. 

Because this one had to be special, we took our classic Sack Coat in 7oz twill to our friend, the mad scientist, Maurizio Donadi of Transnomadica, and asked him to deconstruct and reconstruct our jacket into a one-of-a-kind work of art for another mad scientist in the food space. Taking Jason’s lead on what he liked and needed in a coat, Maurizio and his team came up with these 2 works of art, one of which he called “Food from Outer Space”. A few of the techniques implemented all by hand here in Los Angeles:

  • Repurposed pockets from vintage French chore coats

  • Patches made from distressed antique Hakama pants

  • Custom designed temperature probe pocket crafted from vintage chore coat scraps 

  • Traditional Japanese Sashiko embellishments done with micro stitch patterns

  • Interior and exterior patches made from recycling the original Finery jacket pockets

  • Indigo overdye

  • Natural sun fading over several days
